Amish Batter

3 C Sugar
3 C Flour
3 C Milk

Do Not Refrigerate. DO Not use metal spoon.
Day 1 - Combine 1 cup sugar, 1 cup flour, 1 cup milk in a resealable bowl
: or bag; stir, use wooden or plastic spoon. Day 2 - Stir Day 3 -
Stir Day 4 - Stir Day 5 - Add 1 cup milk, 1 cup sugar, 1 cup flour; stir.
Day 6 - Stir Day 7 - Stir Day 8 - Stir Day 9 - Stir Day 10- Add 1 cup milk,
1 cup sugar, 1 cup flour; Stir; then split among
: 4 containers, these are now starters. Give 3 away & keep 1. You
: can make Friendship Bread with what is left in your container.

Amish Buttermilk Biscuits

Amount Measure Ingredient -- Preparation Method

2 C. sifted flour
1/2 Tsp. salt
3 Tsp. baking powder
1/2 Tsp. soda
3 Tbsp. butter
3/4 C. buttermilk

Sift flour, salt, baking powder and soda together.
Cut in butter with 2 knives.
Add buttermilk and knead lightly.
Roll to 3/4 inch thickness and cut with cutter. Dab top with melted butter and bake 12 minutes in 450 degrees oven.
Makes 12 to 16 biscuits, depending on size of cutter.

Amish Friendship Apple Nut Bread

1 C Amish Friendship starter
At room temperature
3 Eggs
2/3 C Vegetable oil
3 ts Vanilla
2 C Unbleached flour
1 C Granulated sugar
2 ts Baking powder
1 1/2 ts Ground cinnamon
1 t Baking soda
1 t Salt
1 C Nuts -- chopped
2 md Apples -- peeled,fine chopped

Preheat oven to 350 degrees F. Grease two 9-by-5-inch loaf pans. In a
large bowl, beat together the starter, eggs, oil, and vanilla. Add flour,
sugar, baking powder, cinnamon, baking soda and salt; blend. Fold in the
nuts and apples; transfer batter to prepared loaf pans. Bake 50 minutes and
remove from the oven. Allow loaves to cool in pans 10 minutes, then tip
out onto a rack to finish cooling completely.
Note: To make 24 muffins, spoon into greased muffin tins and bake for 25 to
30 minutes

Amish Friendship Spicy Topped Cake

1 C Amish Friendship Starter
3 Eggs
2/3 C Vegetable oil
2 C Unbleached flour
1 C Granulated sugar
2 ts Baking soda
1/2 ts Salt
-----TOPPING-----
1/3 C Butter -- melted
1/2 C Granulated sugar
1/2 C Brown sugar -- firmly packed
1/2 C Quick-cooking oatmeal
Uncooked
1 C Nuts -- chopped
1 1/2 ts Ground cinnamon

Preheat the oven to 350 degrees F. Grease a 9-by-13-inch pan; set aside.
TO PREPARE BATTER In a large bowl, beat together the starter, eggs and oil.
Add flour, sugar, baking soda and salt; mix. Set aside.
TO PREPARE TOPPING In a small bowl, combine butter, granulated and brown
sugars, oatmeal, nuts and cinnamon.
TO ASSEMBLE Put half the batter in prepared pan. Sprinkle with half the
topping; cover with remaining batter and sprinkle on the rest of the
topping. Bake 35 to 40 minutes.

Amish Sugar Cookies

1/2 C Sugar
1/3 C Powdered Sugar
1/4 C Margarine -- (1/2 stick)
1/3 C Vegetable oil
1 Egg -- (large)
1 t Vanilla
1 t Lemon or almond flavoring
2 tb Water
2 1/4 C All-purpose flour
1/2 t Baking soda
1/2 t Cream of tartar
1/2 t Salt

Place sugars, margarine and oil in a mixer bowl and mix at medium
speed until creamy. Add egg, vanilla, flavoring and water, and mix
at medium speed for 30 seconds, scraping down the bowl before and
after adding these ingredients. Stir remaining ingredients together
to blend well; add to creamy mixture and mix at medium speed to
blend. Form dough into 24 balls using 1 tablespoon dough per ball.
Place balls on cookie sheets that have been sprayed with pan spray or
lined with aluminum foil. Press balls down evenly to 1/2' with the
back of a tablespoon dipped in water. Bake at 375 for 12 to 14
minutes, or until cookies are browned on the bottom and lightly
browned around the edges. Remove cookies to a wire rack and cool to
room temperature.

Amish White Bread

2 1/4 tsp dry yeast
1/2 c. warm water
-- (105-115 degrees F)
1/3 c. sugar
2 tsp salt
2 c warm water
-- (105-115 degrees F)
2 1/2 Tablespoons melted butter
6 c unbleached white bread flour -- (6 to 7)

- (Makes 2 loaves)

*Okay--now this *isn't* the Amish friendship bread that has the starter.
*If you let a bread machine do the kneading, put the yeast in first, then the sugar/honey and salt, the rest of the dry ingredients, then the wet ingredients.

**Dissolve yeast in 1/2 c water with a pinch of the sugar. In large bowl, combine sugar, salt, water and butter. Add yeast mixture. Gradually add flour to form a soft dough. Turn onto floured surface and knead until smooth. Place in a greased bowl. Cover and let rise about 2 hours, or until doubled. Punch down. (This would be the time to do your third rising) Divide into two portions and form loaves. Place in greased bread pans. Prick tops with fork (I never do this and it comes out just fine). Let rise in warm place until higher than pans (about 2 hours). Bake at 375 for 25-30 minutes. Cool 10 minutes. Butter tops of loaves (I also never do this because I'm trying to cut back a little on fat). Place pans on sides until loosened. Remove bread and cool completely.

I finally made this bread to check it out. My husband, who doesn't get enough white bread from me :), pronounced it delicious. I find it to be a very good basic white bread with a nice close grain.

Baked Oatmeal

3 cups oatmeal
1/2 cup brown sugar -- (1/2 to 1)
-- it's too sweet w/ more than 1/2c
2 tsp baking powder
1/2 tsp cinnamon
1/2 cup applesauce
1 tsp vanilla
2 eggs -- or Egg Beaters
-- or Ener-G egg replacer equivalent
1 cup rice milk -- or skim milk
-- or fat free half and half
1/2 cup raisins -- (1/2 to 1)
-- or blueberries

Preheat oven to 350 degrees. Mix dry ingredients in one bowl. Mix wet ingredients in another bowl. Stir wet and dry ingredients together and add the raisins or blueberries. Spread in a 9x9 pan lightly sprayed with non-stick spray. Bake 20-3- minutes. Serve as-is, or top with some sort of milk.

Celery Slaw

3 c Celery -- thinly sliced
1/2 c Carrots -- grated
1 Apple -- unpeeled, cored, and
- diced
1/2 c Mayonnaise -- (low-cal)
2 tb Sugar(used sugar substitute)
1/2 t Salt
2 tb Vinegar
1/2 c Walnuts -- coarsely chopped
- (optional)

Combine celery, carrots, and apples. Thoroughly blend remaining
ingredients and fold into celery mixture. If desired, fold in
walnuts or sprinkle over top as a gamish. Chill at least 30 minutes
before serving in lettuce-lined bowl. Delightly crunchy! Food
Exchange per serving: 1 FAT EXCHANGE + 1/4 FRUIT EXCHANGE (IF YOU
USED THE BIGGEST APPLE EVER). I would cut this recipe down to make
this be 1 fat exchange for me and use sugar substitute. Could be used
as a side dish for the vegetarian.
